Highspire Whiskey is made with 100 percent rye grain. All of our unmalted grain, which is 90 percent, is grown by a local farmer specifically for Highspire less than a mile from our distillery. The whiskey is swiftly aged in California wine barrels, allowing enough time to introduce subtle flavors of oak and vanilla, mature the whiskey slightly and showcase the true spice of 100% rye grain. By aging the whiskey in California wine barrels, the delicate flavors of the wine's fruit and spice are introduced to compliment the rye and create a well rounded approachable whiskey.
